How to cook Tahinli Patlıcan Ezmesi ?

Eggplant Caviar or Tahinli Patlıcan Ezmesi

Here is another delicious meze to prepare all year round, the aubergine caviar (Tahinli Patlıcan Ezmesi) is a real treat for your evenings with friends, perhaps to be enjoyed with a nice background of Turkish music.

It is one of my favourites and I enjoy it when I go visit my aunts, who are really good at preparing this eggplant specialty.

The ingredients for eggplant caviar

Here are the ingredients for the preparation.

  • 2 eggplants
  • 2 small cloves of garlic
  • Juice of 1/2 lemon
  • About 20 gr of tahini (sesame cream)
  • Salt
  • Olive oil
  • Fresh parsley

How to make eggplant caviar (Tahinli Patlıcan Ezmesi) ?

You start by piercing the aubergines with the tip of a knife, then the aubergines are put on the grill. But you can, alternatively, use a grill to put on the stove and cook over a low heat.

As soon as the aubergines are cooked, they are therefore soft, we cover them with plastic wrap to make them “sweat”. This step will allow you to separate the pulp from the skin much more easily. Then on a cutting board, cut the aubergines in half, without cutting them in half, we just have to open them to remove the pulp with the help of a spoon.

Once this is done, add a little salt on the eggplant pulp and on the garlic cloves. Immediately after we crush the garlic and add it to the aubergines with a drizzle of olive oil. With the help of a knife, we begin to chop the aubergines quickly and coarsely.
